Chef Giampaolo Maffini has appeared on Grand Gourmet and on Yan Can Cook with Martin Yan. He has also filmed cooking demonstrations in hotel kitchens across Asia, including a ravioli demonstration recorded at the Royal Singi Hotel in Kathmandu.
The demonstrations follow the same pattern as his teaching. One technique per session, explained slowly, with the common mistake named before it is made. Pasta dough hydration, risotto mantecatura and sauce emulsion are the three that come up most often.
