What Will Be In The Book

The cookbook takes forty years of five-star kitchen practice and writes it for a home stove. Classical Italian technique first, ingredients second, shortcuts last. Nothing in it needs equipment a home cook would not own.

Chapters follow the Italian order of a meal. Antipasti, primi, secondi, contorni and dolci. Each recipe carries the region it comes from, the reason the method works and the one mistake that ruins it. Where a dish appears on a hotel menu in a different form, the book says so.

The book draws on kitchens in eighteen countries, so it also handles what to do when an ingredient is not available. Substitutions are given by function, not by guesswork.
