Milan, Italy

Trained under Gualtiero Marchesi, Italy’s most influential chef and first recipient of three Michelin stars, at his flagship Milan restaurant. Also trained at L’Antica Osteria Del Ponte, Cassinetta di Lugagnano, a further Michelin-starred establishment. These formative years established Giampaolo’s uncompromising approach to craft and quality.

Milan, Italy. Trained at the Istituto Professionale Alberghiero di Stato A. Vespucci, then under Gualtiero Marchesi at his flagship Milan restaurant and at L Antica Osteria Del Ponte, Cassinetta di Lugagnano.

Ritz-Carlton Primavera. Chef de Cuisine, 2005 to 2007. Modo Mio at Crown Perth. Opening Chef de Cuisine, 2011 to 2013, recruited from Milan to open the restaurant. Miraggio Thermal Spa Resort, Chalkidiki, Greece. Head Chef. Al Faisaliah Hotel, Riyadh, Saudi Arabia. Head Chef. Monte Da Quinta Resort, Portugal. Head Chef.
